Home-Made: Potatoes with Cray-fish sauce


Ingredients

- Potatoes
- Carrots
- Ugu (Fluted Gourd)
- Onions
- Chili Pepper
- Tomatoes
- Dried crayfish (small)
- Vegetable Oil (preferably with no cholesterol)



There are two processes involved in making this meal. The first being the frying of the potatoes.

First Process: This process is very simple as it entails exactly the same things you do when frying anything.

Step 1

Peel the potatoes to reveal the whitish part of the potatoes then you cut the potatoes in whatever shape you prefer, I favor cutting horizontally but it could be circular as well then add a little salt and be careful to only add at the moment before frying as salt drains out water from potatoes.

Step 2

Heat the vegetable oil in the frying pan and make sure it is well heated else the potatoes will take time frying making them end up a little bit soggy. It is also advisable that the oil isn't over-heated as well so that they don't end up brownish except when you prefer it that way.

Step 3

Pour the potatoes into the frying pan, then wait for about 10 minutes then stir fry to make sure they don't stick to the pan, when they dry enough, remove them and put them in a sieve to drain out the excess oil that might have accompanied them.

Second Process: This is the main part of the dish which requires a little care as every ingredient needs to be added at a precise time.

Step 1

- Dice the carrots, chili pepper and tomatoes in a square-like manner
- Cut the Onions along the circular pattern
- Cut the Ugu (not too much else it will overshadow every other ingredient in the dish)

Step 2

- Pour the vegetable oil into the frying pan and let it heat up for about 2 minutes
- Add a little bit of the sliced onions for the juice to sip out into the vegetable oil. Ensure that it does not darken else it will destroy the dish.
- Add the carrots and stir fry for 3 minutes to soften the carrots so that all the ingredients will have even texture.
- Add the chili pepper and stir fry for 30 seconds
- Add the tomatoes and stir fry for 30 seconds
- Add the crayfish then cover the frying pan and wait for 1 minute
- Add the Ugu then stir fry for 3 minutes
- Add the rest of the onions and stir fry for 1 minute

Your dish is now ready to be served. Best with Cold drink and I promise you will have a very good lunch or dinner.
